Taco Cupcakes

Emily Bites is the site that inspired me to start this blog and this is the type of recipe that inspired me. These get made in a muffin pan and are perfect for portion control. Each cupcake is 4 points plus and packed with flavor!

Ingredients

1-1/2 t Chili Oil
1/2 lb 95% Lean Ground Beef
3/4 c Canned Black Beans, Drained and Rinsed
16 Wonton Wrappers
5 T + 1 t Salsa Con Queso
1 c Chunky Salsa
1 c Reduced Fat Shredded Mexican Cheese

Directions

  1. Preheat oven to 375 degrees
  2. Heat Chili Oil in a saute pan.
  3. Add Ground Beef and Taco Seasoning browning and breaking up with a spoon.
  4. Add Black Beans and continue to cook and stir until warm.
  5. Push a Wonton Wrapper into the bottom of each of 8 muffin cups.
  6. Spoon a teaspoon of Salsa Con Queso into the bottom of each cup.
  7. Divide half of the beef and beans between the 8 cups.
  8. Divide half of the salsa between each of the cups
  9. Top with half of the cheese
  10. Layer a second Wonton Wrapper on top and repeat layers
  11. Bake for 18-20 minutes
We added Guacamole to ours after cooking but if you do that it will add to the points.
