Mini Cinnamon Roll Pie Crust Bites

“I'm not a vegetarian! I'm a dessertarian!”
― Bill Watterson

Let's be honest this is not a healthy recipe but it is a fun snack, breakfast side, or dessert. The kids loved these so much I forgot to take a picture until after they started "chowing down" on these. I love pie crusts, so making a cinnamon roll from them seemed like an easy and logical step.

I couldn't get a picture before Giuliana ate one.

Nutritional Information (calculated on myfitnesspal.com): 9 servings, 284 calories, 41g carbs, 15g fat, 2g protein

Ingredients:

  • 2 Pre-Made Pie Crusts
  • 4 T Light Butter, Melted
  • 2 T Cinnamon
  • 4 T Sugar
  • 1 C Powdered Sugar
  • 1 T Skim Milk

Instructions:

  1. Preheat the oven to 450℉.
  2. On a lightly floured surface, Roll out the Pie Crusts to a thin square.
  3. Brush the pie crust on one side with the melted Butter.
  4. Sprinkle the Sugar over the butter creating a thin layer.
  5. Sprinkle the Cinnamon over the sugar.
  6. Roll the pie crust and cut into 1/2" slices
  7. Place them on a greased baking sheet. They do not need to be as far apart as I have them pictured below since they do not expand much.
  8. Bake them for 11 minutes.
  9. While they are baking, mix the Skim Milk and Powdered Sugar to make the icing.
  10. Let cool for 1 minute on the sheet prior to serving.
  11. Either spoon the icing over the top or serve it as a dipping sauce, enjoy!
