Ingredients
1 c Fresh Basil Leaves
1 Clove Garlic
1/4 c Grated Parmesan
Kosher Salt and Fresh Ground Pepper
3 T Olive Oil
1-1/4 lbs Skinless Chicken Breasts, cut into 1-Inch Cubes
24 Cherry Tomatoes
1 Small Red Onion, Sliced into Wedges
16 Wooden Skewers
Directions
- Blend the Basil, Garlic, Parmesan, Salt, and Pepper in a Food processor. While pulsing the food processor slowly add the garlic.
- Mix the Chicken and the Pesto in a resealable container and marinate for a few hours.
- Soak the Wooden Skewers in water for at least 30 minutes to an hour.
- Thread the Chicken, Tomatoes and Onions onto two skewers. This will help when turning the skewers.
- Heat the grill to medium heat and cook 5-7 minutes turning after 3-4 minutes.
- Enjoy!
